Christmas Tree Matcha Coconut Macaroons Recipe

Ingredients

  • Cooking spray
  • 2 large egg whites**
  • 1/2 teaspoon almond extract
  • 1 (7 ounce) package sweetened shredded coconut
  • 1/4 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 1/2 tablespoons matcha powder
  • 1/8 teaspoon salt

Instructions

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a baking sheet with cooking spray.
  • Whisk egg whites in a bowl until frothy; stir in almond extract.
  • Combine coconut, sugar, flour, matcha and salt in a large bowl. Add egg white mixture and gently stir until batter comes together.
  • Form the mixture into a christmas tree shape (measuring about 1/4 cup). Place about 2 inches apart onto the prepared baking sheet.
  • Bake in the preheated oven until edges start to brown, about 20-25 minutes.
  • Remove from the oven and transfer cookies to wire racks to cool.
  • Dust powdered sugar on top to create snowy effect.

Notes

To store macaroons, place them in an airtight container at room temperature for up to 3-5 days, or freeze the macaroons for longer-term storage.
